In Sallespisse, a small village near Orthez, Emilie makes her own pure sheep’s cheese. She raises the basco-béarnaise breed of sheep on a small farmstead and to ensure their well being and a high quality end product, the sheep are fed in the traditional manner, on grass, with added hay and cereals. The sheep also live in a traditional manner spending their summers in the mountains (on the Sarrance) and being brought down to the valley for the winter. They are milked by hand and she makes and sells the cheese both direct from the farm and at the market in Arthez-de-Béarn.
