On the slopes around Monein, heading toward Lacommande and near to Pau, the Gaillot estate faces onto Jurançon vines. The history of the estate dates back to the 16th century; at this point, the Gaillots were already harvesting vines on their property and they have continued this until the present day. Today, Jean-Louis Gaillot is gradually building on his ancestors knowledge and experience. He produces Jurançon and dry Jurançon in a traditional way using the famous Manseng varieties. The cellars are located in three parts of the building which date from the 17th century. They are equipped with inox tanks for vinification and with oak barrels, which are used to age the wine before it is bottled.
